Pine thyme honey has an intense amber color with low clarity.
The sweetness, the duration of the taste, the intensity and the stability of the aroma in Pefkothymaromelo are moderate.
Its aroma has tones of flowers, a faint aroma of wood and resin.
The smell is of moderate intensity with a slight sense of fruit and wax.
We collect it every year from August to October exclusively in the four large pine forests of the island.
